Humboldt Honey Granola

Recipe adapted from In Praise of Leftovers.

Mix together in one extra-large bowl, or two large bowls:

  • 9 cups rolled oats
  • 2 cups unsweetened coconut
  • 1 1/2 cups walnuts
  • 1 cup pumpkin seeds
  • 3/4 cup sliced almonds
  • 1/2 cup ground flax
  • 1 1/2 tsp. salt

Warm over low heat:

  • 1 cup canola oil
  • 3/4 cup brown sugar
  • 1/4 cup honey
  • Then add 2 T vanilla extract to oil & sugar

Pour oil mixture over oats and mix thoroughly. Divide granola in two separate batches. Bake on parchment paper at 350* for 30-40 minutes, stirring every 10 minutes.

When cool, add approximately 2-4 cups chopped dried fruit of your choice (optional).

Store in an air-tight container to enjoy over cereal, yogurt…or by the handful.
